I have a son now home from Brazil that told me one of the things he did was go to the Relief Society President in each ward/area and ask her for some simple recipes. That way he was able to fix some of the local dishes using the ingredients most common to the area. He said it worked great !

Mom's Favorite Mac 'n Cheese (Stovetop Version)

3 tbs. butter 3 tbs. flour 2 cups milk 1 1/2 lbs. elbow macaroni, cooked 1 lb. medium cheddar cheese - shredded 1 lb. Monterey jack cheese - shredded

Cook pasta thoroughly. Drain. While pasta is in strainer, melt margarine, add flour and whisk. When thoroughly combined, add milk and whisk until smooth and slightly thickened. Add cheese and mix to combine. Add macaroni to cheese mixture, heat through.

(If you have 2 large pans, you can cook pasta while you are making cheese sauce.)

Sweet and Sour Chicken

3 large chicken breasts, cut into small cubes 1/4 c brown sugar 1/4 c cornstarch 1 can pineapple tidbits 1 can chicken broth 1/4 c apple cider vinegar 1/4 c soy sauce

Heat skillet. Add olive oil, butter, or margarine, cook chicken through. Remove from skillet.

Combine in skillet, brown sugar and cornstarch.

With the liquid from the pineapple tidbits and the can of chicken broth, add enough water to make a total of 3 cups. Add to skillet. Add vinegar and soy sauce.

Return chicken to skillet. Add pineapple tidbits. Cook until heated through. Serve over Rice.

To cook rice: 1 cup rice to 2 cups water Ingredients you can add to recipe: Sliced celery, peanuts or cashews, Chinese noodles.

Baked Potato Toppings

Cook Hamburger and Onion - mix with salsa or sour cream or both.

Cheese topping: 1/4 lb butter, softened, 2 cups grated cheddar cheese, 1 cup sour cream. Mix together.

Taco Bell Enchiritos

1 lb hamburger 1 T chili powder 1/2 t onion powder 1/4 c flour 1 t salt 1 1/2 t paprika Dash garlic powder 1 can Red Sauce or Enchilada Sauce

Combine above ingredients in bowl - use hands to mix thoroughly.

Add mixture to 1 1/2 c water in skillet over medium heat. Break up as it cooks, until browned. Should be smooth with no chunks.

Heat 1 16 oz. can refried beans in pan or microwave. Heat Red Sauce in microwave.

Warm tortillas.

Build Enchirito with refried beans, hamburger, Red sauce, and cheese.

English Muffin Pizzas

1 can Pizza or Spaghetti Sauce Ham or Cooked Hamburger Cheese, any type Pineapple or Olives

Top English Muffins with ingredients. Bake in 450 degree oven for 10 minutes.

Teriyaki (Can use with chuck or round steak)

2 lbs. beef (or pork) 1 1 1/2 T sugar 1 1/2 c soy sauce 2 T beef bouillion 2 T ketchup 1/4 t pepper 2 t Worcestershire sauce Garlic powder (clove of garlic amt.)

Cut up meat into strips. Mix rest of ingredients. Marinate several hours. Fry.

Olive Garden Fettucine Alfredo

8 oz. cream cheese - cut into bits 3/4 c Parmesan Cheese - shredded 1 1/2 c butter or margarine 1 1/2 c milk 8 oz fettucini - cooked and drained

In large saucepan combine cream cheese, parmesan, butter and milk, stirring constantly - until smooth. Toss pasta lightly with sauce, coating well.

Best 1st day, if reheating, add a little milk before microwaving.

Tuna Casserole

1 can tuna 1 can cream of mushroom soup 1 1 1/2 c grated cheese 1 c milk 3 cups macaroni, cooked

Too macaroni, add tuna, soup, and milk. Warm through, add cheese. Cook until hot and melted.

Penny Rice

1 pkg. of hotdogs sliced in to 1/4 in. rounds (look like pennies) 2 Tbs. oil 1 can cream of chicken soup 1/2 can water 4 cups cooked rice

1. Put oil in frying pan. Fry hotdog slices until lightly browned.

2. Push hotdog slices to side of pan and add cream of chicken soup to side of pan, cook until bubbly. Add 1/2 can water to soup and hotdogs, stir all together heat til bubbly. Serve over cooked rice.

Pizza Dough Recipe

2-3 cups flour 1 tablespoon yeast 1 teaspoon salt 1 teaspoon sugar 2 tablespoons oil 1 cup warm water

Cheese of your choice Spaghetti or pizza sauce Toppings of your choice

(Caution! Don't put too much toppings on,

Or the crust won't cook all the way in the middle of pizza!)

Mix dry ingredients well (using only 2 cups of flour). Add oil and water and mix well. Knead for five minutes, adding enough flour to mak a soft dough. Roll out on a greased pizza pan (or cookie sheet etc.). Add sauce, cheese, and desired toppings. Bake at 425 degrees F for 12 - 18 minutes, depending on the thickness of the crust. (Note: the crust puffs up a little in the cooking process, so roll it out to 1/3 inch thickness or less unless you like your crust fluffy and breadlike). You can also make a BBQ chicken pizza by using BBQ sauce in place of Spaghetti sauce, and cooked chicken with onions and mushrooms. Carefully, it's a little messier!

SHRIMP Tortilla's

Dice 8 - 10 roman tomatoes Dice 4 - 5 slices of onion Dice to taste Cilantro Dice 4 - 5 radishes

Add together\u2026 add a pinch of salt or to taste Mix a bit of olive oil and lime juice to above ingredients and stir Let sit while you cook the shrimp or re heat shrimp.

Cook shrimp\u2026 you can use fully cooked shrimp and just heat them up.

Place all ingredients in a tortilla shell and enjoy.

Hobo Stew

1lb. ground beef or turkey 2 cans ranch style beans 2 cans diced tomatoes 2 cans corn 2 cans green chilies 1 onion diced 1 tsp. salt

1/4 tsp. cayenne pepper (can add more if you like, depending on how hot you like it)

Brown meat and onion together. Add all the other ingredients. But only drain the fluid out of the 2 cans of corn. Simmer for 30 mins. You can cut this in half if you want or just freeze the left overs in portion serving sizes.

GERMAN PANCAKES

1/2 cup butter 1 cup milk 6 eggs 1/4 tspn. salt 1 cup flour

1) Put butter in pan and put in oven set to 425 F. 2) Mix milk, eggs, salt, and flour; blend together 3) When the butter bubbles, pour batter into pan 4) Cook for 20 minutes

LORI's / Turkey Tacos with Avocado-Corn Salsa

1 firm, ripe avocado, peeled, pitted and chopped 1 c. canned sweet corn, rinsed and drained 1 c. cherry tomatoes , halved 1 T lime juice 1 pkg (12 count) corn taco shells 12 oz. cooked boneless, skinless turkey breast, sliced into thin slices 1 pkg taco seasoning mix (I used chili seasoning because I didn't have taco seasoning) 3/4 c. water.

1 -- mix avocados, corn, tomatoes, and lime juice in medium bowl. Set aside 2 -- warm shells in oven (I nuked the shells for 30 sec. to 1 minute in microwave). 3 -- combine seasoning, turkey, and water. Bring to a boil, reduce hear, and simmer 5 minutes, stirring occasionally. 4 -- Spoon turkey mixture into shells. Top with salsa, cheese, sr. cream or anything else you like.

Biscuit Beef Casserole

1 pkg refrigerator biscuits 1 lb ground beef, browned or sliced hot dogs 2 cans pork & beans 1/2 C barbecue sauce 2 Tbsp brown sugar Grated cheese

Open biscuits and place them in an 8 x 8 casserole dish and flatten them out. Brown in 350 degree oven until just lightly browned. While baking mix together the remaining beef (or hot dogs), beans bbq sauce & brown sugar. Remove biscuits from oven and spread with bean mixture. Top with cheese. Return to oven until heated through and cheese is melted.

Chicken & Dumplings

1 can chunk chicken 1 can mixed vegetables 1 can chicken broth 1 quart water 3 cans refrigerator biscuits Salt & pepper

Mix together everything except biscuits. Bring to a rapid boil, stirring often. Open biscuits and tear them into small pieces and toss into boiling water, stirring often. After last package is tossed, reduce heat and simmer for 15 minutes or until dumplings are done. The first package of biscuits will absorb and will thicken the soup. The other packages will be the dumplings.

We have always enjoyed croque-monsieur.

You take a slice of bread (French bread, or any other bread or bun) lightly toasted.

Then add a slice of ham (or pastrami or any other cold cut). Some of our kids also like to add a slice of tomato (optional). Top with a slice of cheese (my favorite is swiss, but any kind of cheese will do).

Boil for a minute or two until the cheese has melted.

Yummy! Easy quick and done in a few minutes.

I have a recipe for sloppy joes that I got from my mother-in-law and our family LOVES!

1 pound ground meat (beef, pork, turkey or chicken. . . your choice. We use turkey due to beef allergies) 1 small onion, or dehydrated minced onion (optional) 1 bottle catsup 1 squirt mustard 1 squirt BBQ sauce (optional) 1 8-pack of hamburger buns

Chop up onion in cook in a pan. Add ground meat and cook thoroughly. Once meat and onion are cooked, add most of the bottle of catsup. (sloppy joe consistency). Add a squirt of catsup and a squirt of BBQ sauce. Stir and warm through. Serve on hamburger buns. (Our family likes to add shredded cheese to the top)

I also have a recipe for quick, easy chili that I made up and the children love. You can turn it into "Chili spagetti" or serve with tortilla chips.

2 cans tomato sauce. (I use Contadina) 1 can diced tomatoes 1 pound ground meat 2 cans kidney beans 2 small onions, chopped (one to brown with meat, the other to serve minced, raw with "chili spaghetti") chili powder (about 2-4 TBSP. . . really, to taste) sugar (about 2 TBSP. . . really, to taste) 1 pound linguine or angel hair pasta (optional - if you want to make it into "chili spaghetti") 1 bag tortilla chips (optional)

In a small soup pot cook onion, add ground meat and cook through. Add your tomato sauce, diced tomatoes, kidney beans, chili powder and sugar. Heat through and serve either over linguini with fresh chopped onion, shredded cheese, and sour cream OR serve with tortilla chips, shredded cheese and sour cream. OR just serve by itself.

Tater-Tot casserole!~

1 pound ground meat 1 small onion, chopped (optional) 1 pkg tater tots 2 cans cream of mushroom soup (or if you don't like mushrooms, any "cream of" soup will do) 1 (or 2) cans of green beans (depends on how much you like green beans!)

In skillet cook onion, add ground meat and brown thouroughly. Add green beans and cream of mushroom (or "cream of") soup. Heat through. Put in 11X13 baking dish. Put tater tots on top. Bake at 350 until tater tots are browned and crispy.

Macaroni Salad

1/2 to 3/4 bag or (16 ounces) macaroni shells, boil in water until soft 2 jars artichoke hearts 1 medium size can of sliced or wedged black olives (or you can slice them yourself) 1 tablespoon parsley (in the spice section) 1 to 2 teaspoons salt pepper to taste Mix ingredients together and chill.

Potato Salad

Peel, dice and cook until soft, potatoes (probably 4 or 5 large potatoes for a set of missionaries) chopped onions (1/2 a handful) salt to taste sweet pickles, chopped or sweet pickle relish, add as you like, some like more, some like less (about a handful) celery seed or celery chopped finely, as you like (maybe a handful) bottled mustard to moisten and add flavor (about 1/2 cup or so) add more if needed mayonnaise to moisten and add flavor (1/4 cup) add more if needed

Pasta Salad

12 ounces spiral pasta noodles 1 large can of black olives, sliced or slice them yourself 1 cup chopped bell pepper 3 diced tomatoes 1 cup sliced pepperoni or salami (optional) 1/2 cup Parmesan cheese 1/4 cup parsley (in the spice section) 3/4 cup Italian salad dressing

Cook pasta in boiling water until tender. Drain off water. In large bowl, combine pasta with olives, pepper, tomatoes, etc. Toss with mixture of Italian salad dressing, parsley and Parmesan cheese. Keep chilled.

Little Pizzas

French roll sliced down the middle length wise small can of green chilies 2 small cans of tomato sauce 6 green onions, finely chopped salt to taste 2 small cans of chopped olives, or chop them yourself 1/2 cup oil 1/4 teaspoon garlic powder or garlic spread or you can crack 1/2 a garlic clove (optional) 4 cups grated cheese (whatever kind you like)

Mix ingredients or layer as you like and spread on French roll slices. Place in toaster oven and watch until it melts cheese. You can make ahead and store ingredients in plastic bags in refrigerator and bake when ready to eat.

Banana Boats

1 banana per person 1/8 of a cup of chocolate chips per banana 1/8 of a cup of marshmallows per banana

Split banana all the way down, but don't cut it in two. Ease banana open and place chocolate chips and marshmallows inside. Wrap in foil and heat until warm.

One of the easiest recipes that is available the world over is a simple frittata...just scramble up 3-4 eggs and add a little water or milk and a couple Tb. of flour if you have it, and pour into a hot pan of leftover bits of meat and/or veggies.....cover with a lid and turn down the heat till cooked through, top with cheese or salsaor ketchup or ???? and eat with toast or tortillas or ???? Good for you and filling!

One thing my boys love to do is get chicken breasts and cut them up, put them on the stove top in a skillet and add any kind of seasoning. It could be teriyaki sauce, garlic salt, lawrys seasoning, chicken seasoning, etc. One son even likes to take a chicken boullion cube and crush it up and put it in the pan.

Orange Chicken and Rice

In a frying pan, brown the chicken breasts (cut them into 3-4 peices if you want it to cook faster). The insides don't have to be all done, just a nice browning on the outside.

Add 1 cup of rice and 2 cups of orange juice. Cover and let it cook til the juice is all absorbed by the rice.

The rice will have little indents. It takes about 15-20 minutes.

You can substitute other sauces for the orange juice for a variety of flavors. Just make sure you have two cups of liquid. For example, sesame dressing, BBQ sauce or Italian dressing diluted with some water.

Chicken and Spaghetti

Cut up chicken breasts into smaller peices. Brown them in a frying pan.

Add a jar of spaghetti sauce. Cover and let it simmer about 15 minutes. Boil noodles. Drain noodles. Put sauce and cheese on top of noodles.

Fried Potatoes and Meat (ham, cooked bacon, beef etc)

Slice potatoes as thin as you can. Fry them in a pan with a spoonful of butter. As they brown, add salt, pepper or even a few shakes of Italian dressing. After the pototoes are browned, lower the heat and cover til the potatoes are soft enough for you. Add cut, cooked meat for the final couple of minutes.

This may be one that they have already done, but I think is forgotten about that my missionary loves. If microwave is available, cook cleaned baking potatoes in microwave and cook until almost done (remember to not peal but scrub potato clean and poke a few times with a fork). Cut into bite size pieces and fry in a pan on the stove with butter (more tastes better), salt and pepper. Eat with ketchup. I have heard that most, if not all, of vitamin C is in the skins.

an easy and quick chicken and rice recipe for non-cooks:

one family sized box of store-bought rice and seasoning mix (Rice-a-roni, Zatarain's long grain and wild rice mix, etc.) 1 lb boneless, skinless chicken breasts (cubed, whole, or sliced) one large cooking pot with lid

Just add the raw chicken pieces to the boiling water along with the rice and seasoning packet and put the lid on to cook for the prescribed abount of time, usually 20-25 minutes. When cooked together in the same pot like this, the chicken will be cooked fully when the rice is done, and it will all be seasoned together. So simple. One pot, little clean up, and no skills required.

Usually will feed a pair of missionaries one night with leftovers for the next day's lunch.

They can pair with whatever veggies/salad/fruit they wish.

Open Face Grilled Chicken Sandwich

Per sandwich 1 chicken breast, half, skinned and boned 1 1/2 tsp margarine 1 tsp honey 1 tsp soy sauce 1 slice French bread lettuce

Pat chicken dry; trim off fat. Place between wax paper and pound lightly until even and about 1/4 inch thick. Combine margarine, honey and soy sauce, brush on chicken. Place in heated skillet with a little oil. Cook 2 to 3 minutes per side or until cooked through. Watch carefully as honey has a tendancy to burn. Place lettuce on toasted bread, top with chicken. Makes 1 serving.

Bacon and Tomato Sandwiches

2 strips of bacon per sandwich lettuce tomato 2 slices of bread per sandwich

Cook bacon until crispy and then drain on paper towel or napkin. Put on toasted bread and add lettuce and tomato and mayonnaise. Yummy. Good with a bowl of soup

Chicken with Spanish Rice

1 chicken cut up 2 Tablespoons of oil 1 14 1 1/2 oz can stewed tomatoes 1 medium onion, sliced, separated into rings 1 cup uncooked long grain rice 1 1 1/2 tsp salt

Brown chicken in hot oil in skillet. Pour juice from tomatoes into large measuring container. Add water to measure 2 1 1/2 cups. Pour in liquid, add remaining ingredients. (Make sure all the rice is covered with liquid.) Bring to a boil. Reduce heat; cover and cook over low heat for 30-40 minutes or until liquid is absorbed and rice is tender. Makes 4 servings

Buttermilk Fried Chicken

If you like crunchy fried chicken, you will love this recipe

1 chicken cut up salt and pepper 1 cup flour 1 cup buttermilk oil

Wash chicken and pat dry. Sprinkle with salt and pepper. Coat on all sides with flour. Dip in buttermilk and again in flour. Heat about 1 1 1/2 inch of oil in heavy skillet. Cook chicken in hot oil, about 20-30 minutes, turning once. Drain on paper towel. Makes 4 servings.

Fried Chicken Strips

4 large chicken breasts halves, boned and skinned 1 1/2 cup flour 1 tsp salt 1/4 tsp pepper 1 1/2 cup buttermilk or yogurt or sour cream Oil

Cut chicken in 1 inch wide strips. Combine flour, salt and pepper. Dip chicken in buttermilk, then coat with flour. Heat about 1 1/2 inch of oil in large skillet. Fry chicken stirps until golden and cooked through. (do not overcook or they will be tough) Makes four servings.

Tip: Serve with gravy over rice or mashed potatoes and top with chicken strips.

Italian Fried Chicken

Just the right blend of spices

4 chicken breast halves skinned 1 cup flour 1 (.7 oz) package of Italian salad dressing mix (dry) 1/3 cup milk Oil

Combine flour and salad dressing mix until blended. Dip chicken in milk and coat completely with flour mixture. In deep skillet pour in oil to a depth of 1 inch. Heat oil then add chicken and brown over medium heat. Continue cooking, turning several times until chicken is done, about 20 minutes. Makes four servings

Spaghetti

1 1/2 pound of ground beef 1 can of tomato sauce 1 pkg spaghetti seasoning mix

Brown hamburger and add seasoning mix and sauce. Let simmer for a few minutes while you cook some spaghetti noodles. Get a pan of water boiling then add the spaghetti. Cook until tender. Drain and serve with sauce. YUMMY!

Chicken Fried Rice

1 chicken breast 2 cups of rice (cooked already) 1 small onion 1 egg 2 T soy sauce 2 T oil

Put the oil in frying pan and heat, then cut up the chicken into bite size pieces. Cook until done, about 5 minutes. Add onion. Add egg, and scramble. Add rice and soy sauce. Can add vegetables also if you like. Serve hot. Yummy

French Toasted Cheese Sandwich

1 slice of bacon per sandwich 2 slices of bread per sandwich 1 egg 1 1/2 cup milk 1 slice of cheese per sandwich

Mix egg into milk and stir until well mixed. Add 1 tsp of sugar. Cook bacon, then dip one side of bread in milk and egg mixture and place on top of bacon. Put cheese and then put other slice of cheese with the outside dipped in egg mixture. Cook then turn on other side. Serve with jam or syrup.

Hamburgers

1/4 pound hamburger per person 1 bun or 2 slices of bread Salt and Pepper to taste

Shape hamburger into a pattie shape and cook in frying pan until done. 5 minutes or so per side depending on how thick it is. Put on a bun or bread and garnish with ketchup, mustard, mayonnaise.

Tex-Mex Chops

2 boneless or bone in Pork Chops 1 T Vegetable oil 1 cup salsa salt and pepper to taste

Season pork chops with salt and pepper. In Skillet brown both sides or pork chops in oil. Add salsa and lower heat. Simmer for 30 minutes or until chops are completely cooked through.

Salisbury Steak

1 pound lean ground beef 1 egg 1 medium onion chopped 1 beef bouillon cube, dissolved in 1 1/2 cup water

Mix beef, egg and onions. Shape into patties and brown over high heat, drain off any fat. Pour in bouillion and simmer uncovered until desired doneness. 15 minutes or so. Serves 4 to 6

Beef Patties

1 pound ground beef 1 cup mashed potatoes 2 T onion minced 2 T margarine

Mix beef, potatoes, onion, and form into patties. Brown slowly in margarine until desired doneness. Serves 4 to 6

Beef Stroganoff

1 1 1/2 pounds round stead cut into 1/4 inch strips 2 T onion soup mix (powder) 1 6 oz can mushrooms 1 cup sour cream

Brown round steak in skillet. Add soup and mix and can of mushrooms with liquid. Heat until bubbly. Slowly add sour cream and cook until thoroughly heated. Serve with noodles. Serve 4 to 6

(Noodles: Boil a pot of water. Add noodles and cook until tender. It takes maybe 5 minutes)

Hot Dog Stew

1 package beef hot dogs, cut into 1 1/2 inch pieces 3 medium potatoes, peeled and diced 2 T flour 1 1/2 cup water

Brown hot dogs in ungreased skillet. Add diced potatoes. Mix flour and water until smooth. Pour over hot dog and potatoes. Salt and pepper to taste. Cover and simmer. Serves 4

Quick Chicken Gravy

1 1 1/2 T flour 1 cup milk 1 can cream of chicken soup 1/4 tsp pepper

Blend flour and milk and add to soup. Season with pepper if desired. Heat slowly to boiling and cook until thickened.

Hawaiian Pork Chops

4 loin pork chops 1/4 cup flour 2 T oil 4 slices pineapple canned (reserve 1/3 cup juice)

Cover pork chops in flour. Brown in skillet with oil. Top each chop with a ring of pineapple. Add pineapple juice. Cover and cook slowly. Remove meat and pineapple to platter. Pour the remaining juice over chops. Serves 4

Rice Salad

1 1/2 cup Italian Salad Dressing 1 1/2 cup mayonnaise 1 10 oz package frozen mixed vegetable, thawed 3 cups of cooked rice

Cookies the Way You Like 'Em

1 (18.25 ounce) box cake mix 2 eggs 1/2 cup vegetable oil Mix or match the following: 6 ounces miniature chocolate chips 6 ounces butterscotch chips 6 ounces peanut butter chips 1/2 cup shredded coconut 1/2 cup raisins 1 apple, grated 1 cup chopped nuts 1/2 cup finely chopped dried apricots

Missionary Brownies

1 3 oz box instant chocolate pudding 1 box devils food cake mix 2 cups chocolate chips

Mix pudding according to directions on box. When it begins to thicken, pour in dry cake mix. Mix well. (It will be thick) Spread in greased and floured 9x13 pan. Sprinkle chocolate chips over top. Bake 35 minutes at 350 degrees. Yummy!

Favorite Sausage Rolls

3 cups bisquick 1 pound hot sausage 10 oz sharp cheddar cheese grated

Fruit Filled Oatmeal Bars

1 cup flour 1 cup quick cooking rolled oats 2/3 cup packed brown sugar 1/4 tsp baking soda 1 1/2 cup margarine or butter

1 10 oz jar of preserves (jam) In a mixing bowl combine flour, oats, brown sugar and baking soda. Cut in margarine or butter till mixture resembles course crumbs. Reserve 1 1/2 cup of flour mixture. Press remaining flour mixture into the bottom of an ungreased 9x9x2 baking pan. Spread with desired filled. Sprinkle with reserved flour mixture. Bake at 350 for 30-35 minutes or unitl the top is goildn. Coolin the pan on a wire rack. Cut into bars. Makes 25.

Peanut Butter Bars

2/3 cup flour 1 1/2 cup brown sugar 1/4 cup peanut butter 1/4 cup shortening 1 egg 1 T milk 1 1/2 tsp vanilla 1/4 tsp baking soda 1/4 cup quick cooking rolled oats

Combine about half of the flour, the brown sugar, peanut butter, shorenint, egg, milk vanilla and soda. Beat with an electric mixer on medium to high speed till thoughly combined. Beat in remaining flour. Stir in oats. Spread batter into an ungreased 8x8x2 inch baking pan. Bake at 375 oven for 15-18 minutes or till a toothpick inserted near the center comes our clean. Cool in pan on a wire rack. Frost with peanut butter frosting.

Cheese Soup with Jalepeno Pesto

3 cups chicken broth 1 1 1/2 cups shredded carrots 1 cup chopped green onions 1/4 cup tomato paste 2 1 1/2 cups milk 1/4 cup flour 1 tsp dry mustard 1/4 tsp pepper 2 3 ounce packages cream cheese cut into cubes and softened 3 cups shredded sharp cheddar Jalepeno Pesto

In a large saucepan stir together broth, carrots, green onions, tomato paste. Bring to a boil. Reduce heat. Cover and simmer for 2 hours. Combine milk, flour mustartd, and pepper. Stir flour mixture into broth mixture. Cook and stir till thickened and bubbly. Cook and stir for 1 minute more. In a mixing bowl stir about 1 cup of the hot milk mixture into the cream cheese, stir until smooth. Stir cream cheese mixture into the remaining milk mixture in saucepan. Stir in cheddar cheese til cheese is melted. Makes 4-5 servings. Serve with Jalapeno Pesto

Jalapeno Pesto

In blender container or food processor bowl combine 1/4 cup firmly packed cilantro leaves, 1/4 cup firmly packed parley sprigs with stems removed, 3 T grated parmesan cheese; 2 T olive oil or cooking oil; 2 jalapeno peppers cut up; 1/3 teaspoon finely shredded lime peel; 1 tsp lime juice, and 1 clove garlic, minced. Cover and blend or process till a paste forms. Cover and chill up to 2 days. Makes about 1/3 cup. Skyler's favorite Chocolate chippers

Breakfast Bake

8 slices white bread 1 lb sausage browned and drained 1 tsp salt 3/4 tsp dry mustard 2 1/4 cup milk 6 eggs 1 1/2 pound shredded cheddar cheese 1 1/2 cup milk 1 can cheddar soup

Cube bread. Line greased 9x13 glass dish with bread cubes, then cheese, then sausage. Beat eggs, milk, salt, mustard, together and pour over bread. Let stand over night in refrigerator, covered. Next day, before baking mix soup and 1 1/2 cup milk together and pour over dish. Bake uncovered for 325 for one hour.

Chicken Parmesan

6-8 skinless chicken breasts 1 egg 2 T water 1-2 cups bread crumbs oil 1 1/2 cup parmesan cheese 1 cup mozzarella cheese

Mix eggs and water, dip chicken in egg mixture and then in bread crumbs. Heat enough oil to cover bottom of fry pan 2-3 T. Quickly brown chicken on both sides. Place in baking dish laying flat. Pour spaghetti sauce over top and sprinkle Parmesan cheese over top. Bake at 350 degrees for 20 minutes. Remove and sprinkle mozzarella cheese on top and bake for 10 more minutes. YUMMY

TACO SOUP

Taco Rice Skillet

1 # ground beef 1 onion, chopped 1 # can tomatoes, drained 1 c. converted rice 1 pkg taco seasoning (equivalent to 2 tablespoons seasoning)

Cook ground beef and onion (or open the can, take the fat off the top, add broth and ground beef to skillet) Drain tomatoes into measuring cup. Take tomato juice and add water to Make 2-1/2 cups liquid. Put in skillet with rice and taco seasoning. Stir. Bring to boil, then turn down to simmer with lid on and simmer 25 minutes.

Creamy White Chili

1/2 cup milk can use whipping cream or half & half for a creamier soup In large saucepan, sautéhicken, onion and garlic powder in oil until chicken is no longer pink. Add beans, broth, chilies and seasonings. Bring to a boil. Reduce heat; simmer, uncovered for 30 minutes. Remove from heat; stir in sour cream and milk. Serve immediately.

Easy Soup

I use one can of each item, water and all... carrots, peas, corn, potatoes(cut into small pieces)green beans, pork n beans, mixed veg.,

Add one jar of spaghetti suace,(any flavor- I use Rague) Mix all these ingrediences into one pot and warm up and it makes a wonderful pot of veg. soup. Since I am not a meat eater I will make some rice and mix it in for my protein and my family adds chunks of spam to add their meat need.

My son in the Brazil Goiania mission has made his favorite breakfast of German Waffles a lot. He said his companions had never eaten it before, and they all love it. Here's the recipe:

6 eggs 1 C flour 1 C milk, Pinch of salt 1/2 cube of butter or margarine

Melt butter in 9 x 12 pan in 400 degree oven. Meanwhile mix first four ingredients together with a wire whisk till well blended. When butter is melted pour egg mixture in pan and place back in oven. Cook 20 minutes. Mixture will puff up and then fall back down after it is taken out of the over. Serve with syrup or powdered sugar.

MEXICAN MIX CASSEROLE

1 can chile con carne 1 can corn 1 c grated cheddar cheese Crushed tortilla chips

Layer the above ingredients in the order listed. Bake for four minutes in microwave oven or for 30 minutes at 350 degrees in conventional oven. Can also be eaten as a dip for tortilla chips.

Easy, fast, nutritious, and cheap: *Bean sandwiches*

Drain and rinse a can of beans, such as pinto, white, kidney, or black beans (not the green kind) (Rinsing the beans makes them so you don't have gas later) Put the beans on a plate, and mash them with a fork. Heat the beans in a pot or in the microwave. Spread the mashed beans on tortillas or sliced bread. Add sliced or chopped tomatoes, lettuce or spinach leaves.

*Bean Salad*

Drain and rinse four cans of different kinds of beans, such as green, white,black, red, garbanzo, pinto. Mix all the beans together in a large bowl. Add 1/2 cup rice vinegar or balsamic vinegar. (Cider vinegar is too strong a flavor for this recipe.) Add any other vegetables you have around, such as fresh chopped carrots, cucumbers, onions, green or red peppers. This salad can be eaten right now, but it is even better if you make it in the morning and have it for a quick lunch or dinner. Serve with bread.

*Egg Salad*

Do this part in the morning: Find a heavy pot with a lid. Fill it about two inches deep with water. Pour in about a Tablespoon of salt. Gently add 6-12 eggs. Put the pot on the stove and heat on medium heat until the water is almost boiling. This will take about ten minutes. Leave the lid on the pot, leave the pot on the stove, and turn off the heat. Let the pot sit for about 20 minutes. The put the pot into the sink, and add cold water to it, until there is no more heat in the water. Put the eggs in the fridge to cool. Cooking the eggs this slowly prevents them from getting gray yolks. When you are ready to eat the egg salad, this is how to prepare it:

Remove an egg from the refrigerator. Bang the fat end of the egg on the table to crack it. Roll the egg around between your hands to loosen the shell. Now take the shell pieces off the egg. It should be pretty easy. Put all the eggs you want to eat in a bowl. Mash them with a fork. Moisten them with mayonnaise, or oil. Add chopped celery, onions, and peppers, as much as you like. Sprinkle it all with salt and pepper, and stir well. Serve egg salad on a bed of greens, or in a sandwich with lots of greens.

*Apple-y Oatmeal*

This is a filling and lasting breakfast.

Put two cups of water in a pot to boil. Sprinkle with a bit of salt. Add cinnamon if you have some. Wash an apple very well. Leave the peeling on it. Put it on a cutting board, and slice a piece off the side of it. Turn this side to the bottom, and the apple won't roll around while you chop the rest of the sides off it. Chop all these slices into pieces about as big as candy corn. Put all the pieces into the pot of water. As soon as it begins to boil (large bubbles will be coming up from the bottom) turn off the heat. Dump two cups of old-fashioned oatmeal into the pot and stir. Eat it right now, before it turns into a gooey mess. Add milk and sugar if you want. Also good with butter, or soy milk, or orange juice, or raisins, or nuts on it. Use what you have. If this isn't enough breakfast for the two of you, try making twice as much.

I have not heard anyone mention theflyingpig.com. I heard about it a while ago but just sent my first package. The flying pig is associated with Costco in Japan and offers many of the same items as we get here. Some of the prices are reasonable and some are pretty high. I sent a pumpkin pie, which will arrive frozen, and some whipped cream.

I also sent a couple of my missionary's favorites, bagels with strawberry cream cheese, and some yogurt. My missionary loves cheese so I sent something called Cheese Kisses. And of course a jar of peanut butter. My missionary does not have a place to use email right now so it will be a while before I hear how things arrived and if everything was OK. I had to send to the mission home and have it forwarded so I hope it all works out. This Package was instead of a Thanksgiving package. Shipping to Hokkaido was about $16 for a frozen box (you can even send pizza). I think shipping of a cool box would have been about $12. It is less expensive to other parts of Japan.

You can pay by credit card. You enter the missionary and his address in all the payment and shipment info. After you get a confirmation of your order, which comes almost immediately, you give them the actual name and address on the card. You can also put notes on your order. For example I was sending the pie which had to go frozen. I also wanted to send whipped cream but whipped cream only went cool. I put in the notes that I only wanted to send one box. So they combined it and gave me a new total. So far, they have been very responsive and helpful.

You don't have to be a Costco member. If you are and you are able to pay by bank transfer, you get a 5% discount to use on your next order.

I have not used the flying pig before. A friend's nephew went to Japan. His family used it and my friend told me about it. They did warn to watch the amount of the item you are sending. My friends family thought they were sending 6 packs of soda. They did think is seemed expensive. What they were really sending were cases of soda. 24 cans instead of 6. This is why I have not sent before. I wanted to make sure I sent when he would be able to use up what I send before he gets transfered. It gets tempting to fill the box because it does not appear that shipping changes with the more you send. A box costs the same to send whether it is full or not.

When you place items in your cart, it will tell you at the top what percent of the box is full. You will be able to choose for each item what type of box you want, regular, cooled or frozen. Not all items have all the choices but I just sent a note and they put it all in one box.

I placed my order on Monday night in California. The first available arrival date was Saturday morning. You actually get to choose when you want it to arrive. I don't know about the other missions but for Sapporo, everything goes to the mission home, so it will have to be forwarded. So far everything I have sent is just forwarded by the original mail carrier.
